1 Package(s) penne pasta
2 Cup(s) fire-roasted tomato spaghetti sauce
1/2 Cup(s) heavy cream
1/3 Cup(s) shredded Romano cheese
1 Clove(s) minced garlic
1 Teaspoon(s) crushed red pepper flakes
1/2 Teaspoon(s) black pepper
1 Pint(s) halved grape tomato
12 Ounce(s) grated mozzarella cheese
16 basil leaves
1 Teaspoon(s) garlic powder
Preheat oven to 375 degrees.
Cook pasta to al dente according to directions listed on package.
While pasta is boiling, prepare chicken and sauce as detailed below.
Sauce: In a separate medium saucepan over medium low heat, heat tomato pasta sauce, heavy cream, Romano cheese, minced garlic, red pepper flakes (optional) and season with salt and pepper to taste. Cook, stirring frequently, until cheese melts.
Chicken: Place chicken breasts in a Ziploc bag and pound each breast to an even thickness. Remove and spray each chicken breast lightly with olive oil cooking spray. Season each side with salt, pepper and a light sprinkle of garlic powder. Then grill them until cooked through, cut them in half thick wise (like cutting a bun), and dice them into fairly thin strips. Set chicken aside and continue preparation of dish as detailed below.
Drain cooked pasta well, return pasta to pot. Add in grilled diced chicken, grape tomatoes (optional), basil, and half of the mozzarella, then pour warm sauce over mixture. Toss to evenly coat. Pour mixture into a greased casserole or baking dish. Sprinkle with remaining mozzarella and cook pasta uncovered at 375 degrees for about 20 - 25 minutes until cheese is golden. Serve warm.
