3 Cup(s) all-purpose flour
1 Cup(s) bread flour
1 Tablespoon(s) sugar
1 rapid rise active dry yeast
1 Tablespoon(s) garlic salt
1 1/2 Cup(s) hot water
2 Tablespoon(s) olive oil
Combine the flours, sugar, yeast and salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional olive oil, 1 tablespoon at a time. Form dough into a smooth, firm ball.
Cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Punch down the dough, re-cover, and allow it to rise for an additional 20-30 minutes.
While dough is rising the second time, put both pizza stones in the oven and preheat the oven to 450 degrees F.
Punch down dough again and divide into two equal pieces.
Roll out one piece of the dough onto a pizza peel and perforate the crust using a dough docker or the tines of a fork.
Remove one pizza stone from the oven and slide dough off of the pizza peel onto the pizza stone. Top as desired (sauce, cheese, other toppings) and bake at 450 degrees F for 9-10 minutes or until crust is browned and cheese (if used) is bubbly. Remove pizza from oven and repeat process for remaining dough.
Yields two pizzas.
